Both of my regular readers may remember that, once upon a time, I was a food blogger. This made me happy because I love food and I love writing. However, given that I've eaten literally hundreds of times since I last wrote a blog post, you can guess which one I love more. Still, if I can combine my loves, so much the better.
So when I was asked if I would be interested in blogging about beef, you might expect my response to have been, "Heck, yeah!" Which pretty much was my response. And then I started thinking about which beef recipes to share. I have a lot of beef recipes.
There's my Aunt Katie's recipe for meatballs. When I was a kid, I lived for dinners over at Aunt Katie's. She would always make me spaghetti and meatballs because she knew how much I loved them. I was lucky enough to get her recipe, in her handwriting, before she passed away a few years back. If my house was on fire, that recipe card is one of the first things I'd grab after making sure my family was safe.
But I also love Shepherd's Pie. Hundreds of years ago, some pissed-off housewife in some English cottage muttered to herself, "I'll be damned if I'm cooking for that slugabed again tonight. I'll just throw the week's leftovers into a dish and serve that to him." I love that kind of thinking. And from it, the best casserole EVAH was born.
Unless you count beef pot pie as a casserole. Man, that is one of my favorite things to make with the leftovers after I make a pot roast. I have the best pot roast recipe. It's easy, because it has like four ingredients and is made in the slow cooker. And it is so delicious.
Probably by now you're thinking to yourself, well, where are the recipes, woman? And the answer is: downstairs in my industrial size recipe box. And I will find them this week, and I will post them. I promise. In the meantime, hie thee over to the website of the nice people who grow all that beef for you and check out their recipes. Done. I am going to start by trying the Beef Kabobs With Parmesan Orzo. I usually have most of the non-beef ingredients on hand, by no ideas what to do with them. Including the kabob sticks. Also - everything tastes better on a stick. And my husband thinks it's fun to grill in the middle of winter.

Believe it or not Paul and I were just talking about Sloppy Joe's tonight. We found out that the shells we were using for tacos (made with whole wheat) are loaded with sodium. We have found low sodium wheat buns so I said instead of tacos it will be sloppy joe's! Plus my inner cheap self awoke when I read about the free meat.

I agree, Shepard's Pie is the best! I've been known to twist it up a bit in the past, and my family always thinks I'm a genius. I'm def going to have to try the sloppy joe bake, I think my kids might just like it!
